How Taco Cabana Compares
Taco Cabana’s tacos and combos are priced close to other Tex-Mex fast-casual chains, but the fajita meat and made-to-order tortillas push it a bit above a typical drive-thru taco spot. Where it stands apart is the bar program: bottled beer and margaritas made with its own Casa Alta tequila aren’t something you’ll find at most fast-casual competitors.
About Taco Cabana
Taco Cabana was founded in 1978 by San Antonio businessman Felix Stehling, who bought a vacant Dairy Queen building across the street from his bar, the Crystal Pistol, originally to get more parking. Instead, he turned it into a taco stand, and the semi-enclosed patio built into the old structure became the “patio cafe” look that would define every Taco Cabana location afterward.
The restaurant ended up staying open around the clock almost by accident. After patio furniture was stolen on the first night, Stehling decided to keep the doors open 24 hours rather than risk it happening again. That decision, along with the chain’s now-signature pink buildings, helped Taco Cabana grow from a single San Antonio taco stand into a regional Tex-Mex chain with locations across Texas and beyond.
Why Taco Cabana Is Famous
Fresh, house-made tortillas. Tortillas are made in open cooking stations where customers can watch them prepared throughout the day.
Flame-grilled fajitas. Chicken and steak fajitas are cooked over an open flame and served on hot plates or by the pound for family meals.
The patio cafe concept. Semi-enclosed patio dining, born out of the original Dairy Queen building’s layout, remains a signature feature across locations.
Casa Alta margaritas. House-made margaritas using Taco Cabana’s own blue agave tequila are a major part of its happy hour draw.
